Ok, so this first one was one that I had obtained from our CSA newsletter a few years ago. We absolutely love it and have not had it in a while. I forget how yummy these are, so I'll share this one with you first. Children usually LOVE these and what a healthy alternative to those greasy fast food french fries.
Preheat oven to 400 F. Then you simply take your carrots and cut them up like french fries. You then cover them in olive oil. Do not be stingy with the Olive Oil, but do not overdo it either. Then you sprinkle sea salt and some pepper. Put in the oven for about 30-45 mins. depending on how roasted you like them and Voila! The sweetness of the carrots with the salt is very complimentary so be sure to not be stingy on the salt either. I myself usually do not like to use much salt on my food, but this is one of the few times I'll put a regular amount. The carrots that are purple, yellow, and dark orange are all super sweet for this recipe. However, we usually don't get them until fall/winter so we used regular ones which are still good. Enjoy!!
You can batter up the fish with pureed carrot's or beet's then roll them in panko with salt. Fry them up!
Next cut up some cabbage, cilantro, and red onions. Mix w/either mexican crema or sour cream if you can't get the first. I put in a pinch of chipolte powder and cumin in the cream before mixing it with the veggie mix.
Next place fish in a tortilla, then add the cabbage cole slaw-Yummy!
If you're a vegetarian you may use tofu instead of fish.
This here is a super easy recipe. I don't know why I never thought of it before?
All you need to do is...
Preheat oven to 375 degree's
Chicken breast- butterfly cut then put olive oil over with salt and pepper.
Sliced zuchinni & tomatoes into rounds stuff into the breast. Then you throw over the tomatoe's some chopped basil. Throw into the oven for about 45 mins.
When it's done, you throw in a slice of mozzarella in leave in oven for only 3 more minutes. Remove and voila!
Quesadilla's with a flair
This here is very simple, but filled with flavor! First you take corn - I prefer roasting the corn first. Mix it with diced red onions and cilantro. Put in in a tortilla with shredded mozzarella cheese. I added chicken, but if your vegetarian you can leave it out and it's just as good. Next you put the quesadilla into a frying pan with hot olive oil. Slightly brown each side and enjoy!
I know that these recipes are quite simple, but when I feel that there's no time to cook or try some elaborate recipe (which I also love to do!). These here recipes are great for the busy mom.
