Chicken Soup with Rice...


In October
I'll be host
to wiches, goblins

on toast.

I love this book!! I was fortunate to also get the video a while back at a yard sale that a retired school teacher held. It includes "Where the Wild Things Are" and "In the Night Kitchen". Lot's of old skool stuff that I LOVE from when I was a small child! I got the book at a yard sale for 25 cents! I gotta say, Maurice Sendak is a pretty groovy fella :D
Anyhow, this would make for a great theme for your next cooking day with your little one's! I often like to incorporate a book if possible with what we're going to bake or make. A sort of cooking or baking "Theme". It just makes it that much more fun!
My Chicken Soup with Rice Recipe...
Cook one whole fryer chicken in water . Once this is completely cooked (DO NOT throw out the water as this is your broth), debone the chicken.
Add the shredded chicken back into the broth and about 1/3 cup of brown rice, some roasted corn, garlic, sea salt, rosemary and thyme. Allow this to cook for 25 minutes.
Then add 1 bunch of Kale and 1bunch of Mizuna Greens. Let this cook for 20 more minutes then...Voila! You have yourself a great chicken soup that's not only great for fighting off colds, but very tasty too!
